Chia Yogurt

This is an excellent base for a dessert pudding or as a substitute for yogurt in the morning. You can dress it with whatever toppings you'd like and make it in bulk. It will stay good in the fridge for a week!

Ingredients

  • 1-14 oz can of coconut milk (about 18% fat)

  • 1 cup of nondairy milk

  • 7.5 tbs of chia seeds

  • 1 tsp of vanilla extract

  • 1.5 small lemons squeezed (optional, for tart yogurt type)

Preparation

  1. Whisk all ingredients together in an airtight container.

  2. Refrigerate for at least four hours.

  3. Top with agave syrup, brown sugar, granola, fruit, nuts, etc.
