Mint Colada

Although fall officially begins today, this simple, healthy, and delicious recipe is the perfect treat to enjoy during this lingering summer weather.

 

Ingredients

1 lime, juiced and zested

1 handful of mint

1 cup of frozen pineapple

1-1 ½ cups of coconut milk

½ cup of frozen coconut

 

Instructions

Blend all ingredients. I like the mint and lime flavor to be dominant, however, you can cut back on the herb and citrus notes if you’re aiming for a more traditional colada taste. If you prefer a runnier consistency, use more coconut milk; if you prefer a chunkier consistency, use more frozen fruit. This makes about two servings.
