Pumpkin Spice Pancakes with Vanilla Cinnamon Syrup (Vegan)

Serves 3-4

Ingredients

Pancakes

  • 1 cup all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 2 tbs brown sugar

  • Whopping 1/2 tsp cinnamon

  • Whopping 1/8 tsp (each) cloves, nutmeg, ginger, and cardamon

  • 1/3 cup pumpkin puree

  • 2/3 cup milk

  • Butter or canola oil to fry

    Drizzle

  • 1/4 cup maple

  • 1/2 tsp vanilla extract

  • Dash of cinnamon

Preparation

  1. Mix dry ingredients and then add pumpkin puree and milk.

  2. Heat up frying pan to medium heat and grease with oil or butter.

  3. Pour approximately 1/4 cup of batter per pancake and flip when bubbles line the perimeter of the pancake.

  4. Heat up drizzle ingredients in saucepan over medium-low heat.

  5. Serve with chopped pecans, walnuts, or whip!
