Classic Peanut Butter Cookies

I love peanut butter and I love cookies, so the union of the two is about as good as it gets. I want to share a recipe I recently tried that hit all the marks: chewy, sweet, a bit salty, and dense in the best way. Find it here. It is super traditional, perfect for when you’re hankering for the classic version of this treat. Ingredients & Instructions (courtesy of Land O Lakes)

1 cup firmly packed brown sugar

1/2 cup butter softened

1/2 cup peanut butter

1 large egg

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1. Heat oven to 350°F.

2. Combine brown sugar, butter and peanut butter in bowl. Beat on medium speed until well mixed. Add egg and vanilla; continue beating until well mixed. Add flour, baking powder, baking soda and salt. Beat at low speed until well mixed.

3. Shape dough into 1 1/2-inch balls; roll in sugar. Place 2 inches apart onto ungreased cookie sheets; flatten balls in criss-cross pattern with fork dipped in sugar. Bake 8-10 minutes or until edges are lightly browned.
