Tart n’ Spicy Instant Pot Red Lentil Soup

Before you Start

You will need an instant pot!

Ingredients

  • 1 yellow onion, diced

  • 3 cloves of garlic, minced

  • 2 cups of cabbage, sliced/shredded

  • 1 cup of carrots, chopped

  • 1 cup of cranberries or rhubarb depending on the season

  • 1.5 cup of red lentils

  • 1-28 oz can of diced tomatoes

  • 1 tbp smoked paprika

  • 1 tbp of coriander

  • 1 tbp tajin

  • 1/8 tsp of allspice

  • 1/4 tsp of thyme

  • 1/4 of ginger

  • 3 cups of vegetable broth

  • Dash of salt 

  • Optional: lime wedges, sour cream

Preparation

  1. In an instant pot, saute onions and garlic until soft and fragrant.

  2. Add the cabbage, carrots, cranberries/rhubarb, tomatoes and lentils; saute for a minute or two.

  3. Add the spices and vegetable broth and stir.

  4. Cook Instant Pot soup setting for 30 minutes.

  5. Add optional tajin, lime wedges, and sour cream for serving.
