Tart n’ Spicy Instant Pot Red Lentil Soup
Before you Start
You will need an instant pot!
Ingredients
1 yellow onion, diced
3 cloves of garlic, minced
2 cups of cabbage, sliced/shredded
1 cup of carrots, chopped
1 cup of cranberries or rhubarb depending on the season
1.5 cup of red lentils
1-28 oz can of diced tomatoes
1 tbp smoked paprika
1 tbp of coriander
1 tbp tajin
1/8 tsp of allspice
1/4 tsp of thyme
1/4 of ginger
3 cups of vegetable broth
Dash of salt
Optional: lime wedges, sour cream
Preparation
In an instant pot, saute onions and garlic until soft and fragrant.
Add the cabbage, carrots, cranberries/rhubarb, tomatoes and lentils; saute for a minute or two.
Add the spices and vegetable broth and stir.
Cook Instant Pot soup setting for 30 minutes.
Add optional tajin, lime wedges, and sour cream for serving.
