Super Moist, Rich Banana Bread (Veganized)

I have never, in my life, had banana bread that out-did this recipe. It is moist, sweet, and rich. It didn't take much to veganize it. Here it is! (Thank you Great-Great-Grandma Carson)

Before you start 

Preheat the oven to 350 degrees Fahrenheit
Add a small squeeze of lemon to 2.75 tbs of milk = buttermilk
Grease and flour a 9x5 inch loaf pan

Ingredients

  • 1 cup of granulated sugar

  • 0.5 cup of butter

  • 3 eggs (flax-eggs or Ener-G eggs work here)

  • 3 tablespoons of buttermilk

  • 1 tsp of baking soda

  • 1 tsp of salt

  • 1.5 cups of flour

  • 3 ripe bananas (the browner the better) mashed

  • 1 cup of walnuts

  • 1 tsp vanilla

  • Optional: Chocolate chips, peanut butter, etc

Preparation

  1. Whip up your vegan eggs in a small bowl, make sure they are fluffy.

  2. Cream butter and sugar with a spoon or fork in a medium-sized bowl.

  3. Add buttermilk, vanilla, and eggs to the creamed sugar and stir until just combined.

  4. Sift baking soda, salt, and flour into wet mixture, stir until no large clumps remain.

  5. Fold walnuts and bananas into the batter.

  6. Pour batter into the pan and bake for about 1 hour, or until knife/toothpick comes out clean.
