Vegan Apple Turnovers

Before you Start

Preheat oven to 400 F and freeze butter and crisco

Ingredients

Dough recipe derived from bakingamoment

  • 4.4 oz of all purpose flour

  • 2.5 g salt

  • 2.5 oz of butter crisco, nearly frozen cubes

  • 2.5 oz of earth balance, nearly frozen cubes

  • .25 cup ice water

Filling

  • 1/2 tbs butter

  • 3 apples, sliced and halved

  • 2 tbs cranulated sugar

  • 1/2 tsp vanilla extract

  • Dash of cinnamon, nutmeg, and cardamon

  • JUST egg or 1 tbs honey mixed with 1 tbs of coconut cream

Preparation

  1. Cut flour, salt, and fat with pastry knife or fork. The mixture should be very rough and crumbly. Do not over mix.

  2. Add water and mix until it just comes together. Leave large chunks.

  3. Shape into two small rectangles and refrigerate for 20 to an hour or until chilled.

  4. Roll and turn 3 times.

  5. Refrigerate until chilled.

  6. Roll and turn 3-4 times.

  7. Refrigerate until chilled.

  8. Heat butter in small saucepan on medium heat and add roughly 2/3 of the apple slices. Reduce the heat to medium-low. Add sugar and cover for 2-5 minutes until apples are soft.

  9. Remove cover and increase heat to medium. Add vanilla and spices. Heat until excess moisture has evaporated. Mix the rest of the apples in and remove form heat.

  10. Roll out dough and cut into approximately 6 rectangles. Fold in as much apple filling as you can fit, seal edges with fork, and use one of the sheets for making decorations on top. Brush with egg replacement.

  11. Bake for 25-30 minutes until golden brown.
